Perfect end to an overwhelming week involves free range beef tenderloin from the farm, local potatoes and cauliflower topped with cheese sauce from scratch.
My cheese sauce is easy and amazing.
3 tbsp butter in a pot, when melted I whisk in 3 tbsp flour and 1/2 tsp thyme then quickly add 1 1/2 cup milk while whisking all the time. When it's boiled and thickened I add 1 1/2 cup shredded cheddar cheese. Let cook for a few minutes to thicken and sprinkle with smoked paprika...yum
